Red Wine Vinegar with Shallots and Spices

This vinegar imparts a great flavor. Use it sparingly on salads or vegetables, or substitute it for other vinegars in salad dressings.

Ingredients

8 oz. (120mL) red wine vinegar

1/8 cup (25g) shallots, peeled

1 tsp (2g) black peppercorns

1 sprig fresh rosemary

Directions

Combine all the ingredients in a bottle or jar and seal tightly. Store in the refrigerator.
